In an oven preheated to 180ºC (350ºF, Gas Mark 4):
For a turkey under 4.5kg allow 45 minutes per kg plus 20 minutes
For a turkey that’s between 4.5kg and 6.5kg allow 40 minutes per kg
For a turkey of more than 6.5kg allow 35 minutes per kg

Can't tell you how many people I've taught to roast a turkey. It's the easiest meal to feed a crowd. I actually do this thing though where I mix olive oil, spices, lemon juice together and pulverize it into a pesto and rub that underneath the skin (between the skin and the meat) so it has more staying power. I place herbs in the cavity too. I include lavender generally…because I like it. Also, I roast at 500 for about 15 minutes at the outset and then turn the temp down. Will try your version though!?

Big bad Jamie, You have to get stuck into the bush oven for roasting on the open fire or heat beads. It is amazing. The meat just falls off the bone and the flavours permeate not only the meat but the nostrils of the invites. Great when you have family or friends over. A few beers or wine while the meat is cooking on an open fire outside, it is heaven on earth. Check out the Hilly Billy oven made in OZ for the best of the best camp ovens (no I don't work for them). Delicious Jamie – time to tuck in! For years I have also been roasting my bird upside down. Keeps the breast meat remarkably moist. All that's needed is a deeper trivet base of veggies; easy-peasy. Works every time.?
