Ultimate Spanish Omelette | Omar Allibhoy



Mastering a classic Spanish dish just got easier. The wonderful Omar Allibhoy is back with his favourite recipe for Tortilla de Patatas – or Spanish omelette to you and me!
There may be just three ingredients in this dish but each one is used to create an omelette that has bags of flavour.
Caramelised onion provides a delicious natural sweetness while the softened potato gives texture and depth. Mix through eggs and cook until golden and firm to the touch. The perfect omelette will be slightly soft and gooey in the centre. Makes you want one now doesn’t it?!

We have that in Tanzania, we call it (chips mayai) the only difference is that we don't leave it for that much time and we put eggs in the pan with fries. But it's good to know the other technique for that?

I used 1 large onion and 3 large potatoes and followed the techniques exactly using an outside gas camp stove for the 1 minute high heat and then switching to low. I don't think this technique would work as well on an electric stove. The final result was excellent and I agree with user comments, let it rest. I lived in Spain for a number of years and this recipe takes me right back. Delicious?

My onions seem to skip caramelization and burn within a few minutes. Meanwhile, the potatoes still need more time. What's happening here?

Omar says "very hot pan", but perhaps my stove puts out more heat than convention (In Asia, so fire might be dialed up to be suitable for flying in a wok).?
